DELICIOUS DINING - Sesame-Garlic Roasted Carrots
Fruits and vegetables - more matters!  That's the new slogan (replacing the "Five-a-Day" campaign).  There is a large gap between how many fruits and vegetables people know they should eat, and how many they actually eat.  Try this delicious recipe and start getting more veggies today!
 
(From the Hy-Vee Test Kitchen)
 
Serves 2
 
You'll need:
1c. baby carrots, halved lengthwise
1tsp. Grand Selections garlic-flavored olive oil
Hy-Vee salt and Hy-Vee pepper, optional
1/4 tsp. sesame seeds
 
 
All you do:
 
1.  Preheat oven to 400 degrees
2.  Toss carrots, olive oil, salt and pepper.  Spread on baking sheet.
3.  Roast for 15 minutes or until carrots are tender and beginning to turn golden brown.
4.  Sprinkle with sesame seeds.  Roast for an additional 2 minutes or until sesame seeds are beginning to turn golden brown.
5.  Season with additional salt and pepper, if desired.
